Smoked pork combined with sauteed spinach makes for a very yummy omelet.
Scramble eggs and sprinkle with salt, mixing well.
Heat pan on medium head and add oil, then saute garlic until fragrant and add spinach. Cook on medium heat until wilted and remove from pan and set aside. Reheat kalua pig separately.
Add butter to pan and spread around to cover. Add eggs, and when just cooked, flip over. Quickly add kalua pig, spinach, and cheese, reserving some cheese for the top. Fold over, wrapping up the insides in your omelet.
Sprinkle remaining cheese on top.
